Lunch

Survival of the fittest, right? 

Which means part of being prepared is being fit. 
Dang. 

So I have had to find ways to work on getting fit. 

Unfortunately sugar is a major weakness, in fact I think my emotional attachment to sugar is a genetic disorder.

But my sister gave me this fantastic recipe which is filling and very healthy.

Quinoa Salad (recipe courtesy of Sarah Lindsey)

1 Tbl oil
2 cup Sweet Onion, chopped
1 cup red bell pepper, chopped
1 cup quinoa rinsed, drain
2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. salt
1 1/2 cups water
15 oz. can black beans, drained and rinsed
1/2 cup cilantro, chopped, divided
feta

Heat oil, medium heat
Add onion, pepper, salt, for 5 minutes
stir in next 4 ingredients 
Add water; boil. Cover; reduce heat to medium. Simmer for 14 minutes
Add beans and 1/4 cups cilantro
cook uncovered for 3 minutes (liquid absorbed)
Transfer to bowl; sprinkle cilantro and feta

notes: 
-I don't like cilantro so I completely omit it. 
-Chop up some lettuce and spoon some of the quinoa mixture along with sliced grapes and top with your favorite dressing.
-I also like to add toasted almond slices. 
-The remaining quinoa mixture I put in a tupperware in my fridge and add it to a salad for lunch everyday.

  1. So I read your blog while eating a brownie. I am pretty sure the sugar attachment is genetic. :-) I love quinoa and we make the black bean and mango quinoa salad from Our Best Bites all the time. Can't wait to make this one as well!
